Oats are one of the healthy ingredients which we all should include in our diet. Thinking this, i bought one big packet of ‘quick oats’ from Costco. Now, the only option I have to finish them is by baking my favorite oatmeal cookies.
Here is the recipe:
1 cup butter (or shortening), softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs (I use flax seeds as egg substitute)
1 1/2 cups all-purpose flour
3 cups rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt (if butter is unsalted)
1 cup raisins/ chocolate chips/ walnuts/ butterscotch chips (optional elements, put one or all)
Preheat oven to 350 degrees F (175 degrees C).
Combine the flour, oats, baking powder, cinnamon and salt; stir into the sugar mixture.
Stir in the walnuts and the chocolate chips. Drop by rounded teaspoonfuls on greased cookie sheets.
Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container.
